love most about this time of year is the variety of warm beverages at
your fingertips. Come on, there’s literally a a Starbucks on every
corner. Don’t act like you haven’t secretly gone to one on the way to
work
With my pumpkin spice latte recipe, you can forget about spending that $5 for a such a little drink. Make one yourself for so much cheaper! Not to mention, you can enjoy it in the comfort of your own home in your pajamas. Now doesn’t that sound nice…
Pumpkin Spice Latte
(Dairy-Free, Vegan Option)
Ingredients:
- 2 c. non-dairy milk
- 2 Tbsp. pumpkin puree or canned pumpkin
- 2 Tbsp. honey or Grade B maple syrup
- 2 Tbsp. vanilla extract
- 1/2 tsp. pumpkin pie spice, plus more to garnish
- 1 to 2 shots espresso, about 1/4 cup of espresso or 1/2 cup of strong brewed coffee
Method:
In a saucepan, whisk
together milk, pumpkin and and honey and cook on medium heat, stirring,
until steaming. Remove from heat, stir in vanilla and spice, transfer
to a blender and process for 15 seconds until foamy. If you don’t have a
lbender, don’t worry about it – just whisk the mixture really well with
a wire whisk.
Pour into a large mug or two mugs. Add the espresso on top.
Garnish:
Top with whipped cream, if desired, and sprinkle pumpkin pie spice, nutmeg, or cinnamon on top.
